Cauliflower Morning Hash

Move over potatoes... make way for this low-calorie, low-carb, and tasty alternative. This cauliflower skillet hash is a great way to get more veggies in your diet.
FOOD FACT: Botanically, cauliflower is a member of the cruciferous or Brassicaceae family of vegetables and has a similar nutritional profile to that of family members like cabbage and broccoli. It contains high amounts of the cancer-fighting compound sulforaphane.

Ingredients
  

  • tablespoons canola oil
  • ¼ cup red onion, diced
  • ½ cup red bell pepper
  • 1 tablespoon shallots, minced
  • ½ cup sausage chorizo, casing removed and crumbled
  • 1 (12-ounce) bag cauliflower rice
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup pepper jack cheese, shredded
  • 1 piece green onion, sliced

Instructions
 

  • Combine the canola oil, red onion, and red bell pepper in a large skillet. Sauté on medium heat for 2 to 3 minutes. Add the shallots and chorizo and continue to sauté for 2 to 3 minutes. Add the cauliflower rice, salt, and black pepper. Stir occasionally for about 5 minutes. Remove from the pan and top with cheese and green onion. Serve with your favorite style of eggs.
