Amee’s Balsamic Beef Asparagus Roll-Ups

I met Amee at a National Cattlemen’s Beef Association spokesperson meeting in Aspen, Colorado. In addition to being a complete sweetheart, she has some of the best healthy beef recipes on her website (https://ameessavorydish.com). This is one of my absolute favorites!
FOOD FACT: The US Department of Agriculture has established three quality grades for beef: Prime, Choice, and Select. Prime beef is produced from young, well-fed beef cattle and has abundant marbling (i.e., streaks of fat). Prime roasts and steaks are excellent for broiling, roasting, or grilling. Choice beef is high quality but has less marbling than Prime. Choice roasts and steaks from the loin and rib will be very tender, juicy, and flavorful and are suited for broiling, roasting, or grilling. Less tender cuts are perfect for braising, roasting, or simmering on the stovetop with a small amount of liquid. Select beef is very uniform in quality and normally leaner than Prime or Choice. It is fairly tender but has less juiciness and flavor. Select beef is great for marinating or braising.

Ingredients
  

  • 1 bunch asparagus spears
  • 1 pound sirloin tip steak,

    very thinly sliced

  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 to 5 ounces sharp white cheddar cheese, cut into strips
  • Balsamic vinegar

Instructions
 

  • Preheat the broiler. Wash the asparagus and snap off the ends. Bring a saucepan of salted water to a boil and add the asparagus. Cook 3 minutes and immediately submerge asparagus in a bowl of ice water to stop the cooking process (they should be crisp-tender). Drain and set aside.
    Season the steak slices with salt and pepper. Top with cheese and 3 to 4 asparagus per roll. Roll up the steak and drizzle with a little balsamic vinegar. Broil for 4½ minutes. Drizzle with a little more vinegar before serving, if desired.
