Healthy Strawberry Breakfast Cookies

Inspired by the California Strawberry Commission, these healthy strawberry cookies make for a great breakfast superfood.

This recipe was inspired by the California Strawberry Commission. Visit their website (http://www.calstrawberry.com) for information and great recipes using these tasty superfood berries. This recipe also provides a substantial amount of potassium from the strawberries, bananas, and coconut.

FOOD FACT: Strawberries are completely a product of plant breeding. Even before biotechnology (i.e., GMO technology,) emerged, farmers and scientists were crossbreeding plants for optimal nutrition and appearance. It is important to always wash strawberries before cooking or eating them, as bacteria can easily grow in their tiny pores.

Ingredients

  • 1 cup dates, pitted
  • 2 bananas, ripened
  • 1 tablespoon coconut oil
  • 2¼ cups strawberries, finely chopped
  • 2 cups rolled oats
  • 1½ tablespoons chia seeds
  • ½ cup unsweetened coconut
  • 2 teaspoons cinnamon
  • 2 tablespoons natural vanilla whey protein powder
  • 1 Nonstick baking spray

Instructions

Preheat the oven to 350°F. Spray a baking sheet with nonstick baking spray. Remove the pits from the dates. Place the dates and bananas in a blender and blend. Transfer the mixture to a large bowl and combine with the coconut oil. Gently stir in the strawberries.- In a medium bowl, mix together the oats, chia seeds, coconut, cinnamon, and protein powder. Add the dry ingredients to the wet ingredients and stir well.- Roll the cookie batter into 2-inch balls and pat down gently. Bake 15 to 18 minutes. Allow to cool on the baking sheet for 5 minutes and then finish cooling on a cooling rack.
