Ingredients
- 1½ tablespoons canola oil
- ¼ cup red onion, diced
- ½ cup red bell pepper
- 1 tablespoon shallots, minced
- ½ cup sausage chorizo, casing removed and crumbled
- 1 (12-ounce) bag cauliflower rice
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ cup pepper jack cheese, shredded
- 1 piece green onion, sliced
Instructions
Combine the canola oil, red onion, and red bell pepper in a large skillet. Sauté on medium heat for 2 to 3 minutes. Add the shallots and chorizo and continue to sauté for 2 to 3 minutes. Add the cauliflower rice, salt, and black pepper. Stir occasionally for about 5 minutes. Remove from the pan and top with cheese and green onion. Serve with your favorite style of eggs.
