Apple and Ricotta Cheese Pancakes

Apple season is one of my favorite times of the year. When I was a kid, I loved to head out to my aunt and uncle’s apple orchard and pick bushels of apples to experiment with in the kitchen. If you’ve never added ricotta cheese to pancake batter, you are definitely missing out!
FOOD FACT: Maillard browning is the process by which amino acids from proteins react with sugar to produce the characteristic brown color and flavor of these yummy pancakes.
Ingredients
- 1 cup ricotta cheese
- 1 cup whole milk
- 1 cup dried, cooked, unsweetened apples
- ½ cup all-purpose white flour
- 1 tablespoon honey
- ½ teaspoon cinnamon
- 1 tablespoon roasted almonds, chopped
- ½ teaspoon salt
- ½ teaspoon nutmeg
- 4 large egg yolks
Instructions
Use a wire whisk or mixer with a whisk attachment to mix together the ricotta cheese, milk, apples, flour, honey, cinnamon, almonds, salt, and nutmeg. Beat the egg yolks in a separate bowl and then fold them into the batter. Lightly coat a cast-iron or stainless-steel frying pan with butter and then fry the pancakes until both sides are golden brown. Serve with your favorite toppings. My favorite is maple syrup and fresh berries!
