Christmas Divinity Fudge

FOOD FACT: Divinity is temperamental. It is very sensitive to humidity—more than any other candy. Avoid making it on a wet or humid day.
Ingredients
- 3 cups sugar
- 1 cup white corn syrup
- ½ cup hot water
- ¼ teaspoon salt
- 2 egg whites, stiffly beaten
- 1 teaspoon real vanilla extract
- 1 cup walnuts
Instructions
Stir together the sugar, white corn syrup, hot water, and salt in a saucepan over low heat until the sugar has dissolved. Boil without stirring to 265°F on a candy thermometer or until a little mixture that is dropped in cold water forms a hard, brittle ball. Remove the syrup mixture from the heat and slowly pour over the stiffly beaten egg whites, while beating with a mixer until the mixture loses its gloss and a small amount that is dropped from a spoon holds its shape. Fold in the vanilla extract and nuts. Drop by the spoonful onto wax paper.
