Ingredients
- 12 pieces eggs
- ¼ cup mayonnaise
- 1 piece large ripe avocado
- 2 tablespoons lemon juice
- 1 tablespoon chopped dill pickles
- 1 tablespoon yellow mustard
- ¼ teaspoon celery salt
- ¼ teaspoon salt
- ¼ teaspoon pepper
Instructions
Cover the eggs in water in a large saucepan and bring to a boil. Boil the eggs for 12 minutes and then remove immediately and place into an ice water bath. Allow them to cool enough to handle and you will easily be able to remove the shells.- Slice the eggs in half and scoop out the yolks. Place all yolks into a large bowl and then add the remaining ingredients. Taste and adjust seasonings as needed. Spoon the filling into a pastry bag and then fill each egg half. Top with optional toppings if desired. Keep refrigerated until ready to serve.- Hint: Sprinkle the top with paprika.
