Sometimes, nothing is better than a hearty bowl of tomato soup and a grilled cheese sandwich! (Hint: Try using sourdough bread and sharp white cheddar cheese.) This recipe is based on a version served at my favorite brunch spot in Washington, DC. Why pay $30 for brunch when you know you’re just going to order this outstanding grilled cheese and tomato soup?

FOOD FACT: Tomatoes are commonly thought of as a vegetable but they’re actually a fruit. They are the major dietary source of the antioxidant lycopene, which has been shown to reduce the risk of prostate cancer in men. In order for your body to efficiently absorb lycopene, you need to consume a little fat along with the tomatoes.

Ingredients

  • 6 tablespoons (¾ stick) butter
  • 1 medium white or yellow onion, diced
  • 2 (14.5-ounce) cans diced tomatoes
  • 1 (46-ounce) can tomato juice
  • 4 tablespoons sugar
  • 1 tablespoon chicken base
  • 1 teaspoon freshly ground black pepper
  • 1½ cups heavy cream
  • ¼ cup chopped fresh basil
  • ¼ cup chopped flat-leaf parsley

Instructions

Melt the butter in a large pot or Dutch oven. Sauté the onion until translucent. Add the diced tomatoes and stir to combine. Add the tomato juice. Next (and this is important!), add 4 tablespoons of sugar. This will combat the acidity of the tomatoes. Add the chicken base and freshly ground black pepper to the pot. Stir to combine and heat to almost a boil. Remove the soup from the heat and stir in the cream. Add the basil and parsley and stir for an additional 2 minutes. Serve.
